Rainbow Chard Roll Ups

Do you ever just crave a crunchy, healthy, tasty lunch? I certainly do, especially if I have had a super active morning. These rainbow chard roll ups make the perfect lunch and are incredibly tasty and filling and also a great way to use up any leftover veg you have in your fridge salad drawer. You can follow the ingredients here, or just use up whatever you have in your fridge.

These make a great addition to a picnic too – wrap them tightly to avoid them unravelling in your picnic bag though! You can make them with just about any veg – I like to add beetroot and crumbled feta to mine. Let me know what flavour combinations you try out!

Ingredients

A few tablespoons of hummus

2 turkey slices

A selection of vegetables chopped into strips such as carrots, cucumber, and spring onions.

Method

  1. After you have washed and patted dry you rainbow chard leaves, cut off the stems and put to one side.
  2. Spread the humous over one side of both leaves.
  3. Lie a slice of turkey on each leaf on top of the hummus layer.
  4. Slice up you rainbow chard steps and lie them across the slices of turkey.
  5. Do the same with the rest of your sliced veg.
  6. Roll up your rainbow chard leaves and hold them together with a cocktail stick if needed.
  7. Pick up and eat like a wrap.
  8. Enjoy!
