Ginger Oatmeal Cookies

No Bake Oat & Ginger Cookies

These no bake oat & ginger cookies are an absolute delight. If you wake up feeling a little grey, make sure you whip up a batch of these and enjoy them with numerous cups of tea.

Much better than reaching deep into the cookie jar, these beauties are sweet, gingery and oaty with an irresistible flavour. Plus, they’re low sugar and high energy (oats are a valuable source of whole grains and are also high in protein).

Who fancies popping over for a brew and a round of these?

These cookies never hang around long in my house, but if you somehow manage to not eat the entire batch straight away, store them in a sealed container in your fridge and eat with 24 hours.

Ingredients

50g unsalted butter

200ml double cream

1 heaped tbsp peanut butter

3 tbsp Honey

1 tbsp ground ginger

200g large, rolled oats

Method

  1. Put the butter, cream, and peanut butter in a saucepan over a medium heat and bring to boil.
  2. Turn the heat down to low and leave to cook for 5 minutes.
  3. Tip the remaining ingredients into the pan and mix well.
  4. Line a baking sheet with greaseproof paper and drop tablespoons of the mixture onto it. Cover loosely and chill in the fridge for about 25mins or until set.
  5. Make yourself a brew and enjoy!
