Feta & Spinach Breakfast Quesadilla

The benefits of starting your day with a savoury breakfast are numerous.  A morning meal based on proteins will help reduce appetite and cravings throughout the morning so and you don’t get to lunchtime starving.

The nutrients that come from a savoury breakfast are important to improve your attention, endurance and memory skills helping you stay focused all morning.

It will also help keep your blood sugar stable.

What better savoury breakfast to choose than this quesadilla recipe. It is super quick and easy to knock up and totally addictive too. I’m sure it will become a stable in your household in no time.

Two Eggs, well beaten.

Handful of feta, crumbled.

Handful of spinach

One tortilla wrap

A little butter


  1. Melt the butter in a frying pan over a medium heat.
  2. Pour the beaten egg mixture in and let cook (don’t stir it!) for 30 seconds.
  3. Pop the wrap on top of the egg mixture and gently press it down, leave for 20 seconds.
  4. Using a spatula, flip over the tortills/egg, the egg should stick to the tortilla.
  5. Sprinkle the crumbled feta and spinach on one side.
  6. Fold the tortilla over so it is now in half and the egg, feta & spinach is on the inside.
  7. Remove form the pan and cut into 2/3 triangles to serve.
  8. Pro tip: I like drizzling mine with a little siracha for some spice.
